Our commitment to quality and attention to detail set us apart, and our unique pizza-making process ensures that each bite is a testament to our dedication to excellence. The Dough: A Labor of Love

Our dough is the heart of our pizza, and we take great care in crafting it to perfection. We start with a pre-ferment called a poolish, which infuses our dough with a depth of flavor and a light, airy texture that is hard to find elsewhere. The poolish method not only enhances the taste but also allows us to use less yeast, contributing to better digestibility.

This poolish is combined with our other ingredients, and then we let the dough undergo a cold fermentation process for 48 hours in the refrigerator. This extended fermentation period allows the flavors to develop fully, resulting in a dough that is rich, complex, and easy to digest.

The Proofing Process: Patience Pays Off

Once our dough ball reaches room

temperature and is ready for the next step, we take a different approach from the typical high-temperature, quick-bake method.

Instead of rushing the process, we push the dough out into pans and let it proof for an additional three to four hours. This crucial step allows the dough to rise slowly and evenly, creating a tender, flavorful crust with a perfect balance of chewiness and crispness.

The Baking: A Two-Step Mastery

Our baking process is where our pizza truly distinguishes itself. We begin by par baking the proofed dough for 10 minutes. This initial bake helps to set the crust, ensuring it remains sturdy and flavorful. After this par bake, we add our carefully selected toppings and finish the pizza with a second bake for another 10 minutes. This two-step baking process, totaling 20 minutes, guarantees a perfectly cooked pizza with a golden-brown crust and toppings that are melted to perfection.
